earlier today i said to mr angelo that i felt like something fresh and easy for dinner. then i thought, it's about time we try out that "easy pho" recipe we've been looking at a few of times. making regular pho takes a looooong time, and since it is our favourite vietnamese dish, the fact that we might ruin the whole fantasy about making it ourselves have kept us from trying. but tonight we did. and we did good. no, we did great! people, do try this at home. we didn't have any coriander seeds or bean sprouts and it stil turned out perfectly. just make sure you don't add the beef to the broth until the noodles are al dente, even if it says otherwise. you don't want taht beef over cooked! oh and we used spring onions instead of shallots.
